Grill with gusto: Asparagus with vinaigrette, chipotle cheeseburger, honey glaze – Vancouver Sun

There are some tips to prepare barbecue for family and guests. Fresh vegetables especially asparagus should be grilled for better flavour. For firing charcoal the tips from Weber-Stephen Products LLC can be followed. The two-zone fire charcoal arrangement can be used for a wide variety of foods. Direct heat is best for tender pieces of foods where as indirect heat is best for tougher foods.

however, for vegetables i definately like to use the highest possible heat setting.  lower heats tend to make vegetables soggy and soft.  in college i worked at a thai restaurant and we used to cook vegetable with hot, hot oil to create hot vegetables that were cooked to a searing temperature without losing the crunchy texture of the vegetables.  I was amazed and copied the cooking technique at home with a new wok.

Today I try to cook outdoors as often as possible and I have a wok for my barbecue  – but i hardly ever use it anymore as i have an infrared gas grill.  infrared gas grills are able to heat up to over one-thousand degrees in minutes so my vegetables are crunchy and hot without the wok or the oil.
